Bezier curves are used in other digital media such as graphic design, using vectors to create designs such as logos with the pen tool.
When two anchor points without a handle are placed, a straight line is drawn between them as there is nothing to define a curve.
The pen tool essentially allows a user to draw anchor points and drag out handles depending on your mouse motions.
In programs like after effects, motions can be smoothed out by opening the dope sheet and holding alt when clicking the anchor points to bring up the handles that can altered at will. The same thing can be done in Maya by opening the graph editor under the animation windows.
